I first became curious about this drink after seeing the Starbucks iced lavender oatmilk latte on their menu. It felt like the perfect spring twist on my usual iced coffee routine—especially since I already love making other copycat drinks like my Iced Vanilla Latte and Brown Sugar Shaken Espresso at home.
This homemade version ended up being a surprise hit for me. I wasn’t sure what to expect—this was my first time using culinary lavender, and at first, it reminded me a little too much of a fancy room spray.
But after a few experiments, the mellow, herbaceous flavor really started to grow on me. I find it’s not overly sweet like a caramel latte—just light, refreshing, and the perfect espresso drink for spring and summer!
Ingredients

You’ll need the usual latte basics—espresso, milk, and ice—plus a good lavender syrup to bring in that signature flavor. I use my homemade syrup, which has a subtle lavender taste that’s not overpowering.

Homemade Lavender Syrup (Just 3 Ingredients!)
This simple syrup is the key to that soft floral note. All you need is water, sugar, and dried culinary lavender.
Make It Like Starbucks
If you’ve been craving the Starbucks iced lavender oatmilk latte, this homemade version gets you close. While they use lavender powder, my syrup offers a more balanced flavor.
Use oatmilk for that creamy finish, and blonde espresso if you have it. It’s lighter and pairs perfectly with herbal lavender.
What I Use to Brew Great Espresso at Home
I use the Breville Barista Express to make espresso at home, and I love it. It’s a beginner-friendly espresso machine, with a built-in grinder and everything you need to get started.
Another option for your at-home espresso, is a Nespresso Machine. No new skills required, just pop in your favorite capsule and press the start button.
How to Make an Iced Lavender Latte

- Step 1: Add ice to a tall glass, then add your lavender syrup. You can also add the syrup to the espresso shot glass and brew the espresso directly over it instead.

- Step 2: Brew a double shot of espresso. Using freshly brewed espresso is always best.

- Step 3: Pour the espresso directly over the ice in your glass. The ice will melt a bit and cool the espresso.

- Step 4: Add your milk, and more ice if desired. Stir to combine and enjoy!
